NO NITRITES EVER, No exceptions!
Nitrites have always been used for the preservation of processed meats. They can be either added directly to the recipe or obtained from natural ingredients such as vegetables. In fact, Nitrates, which are naturally present in nature in certain vegetables such as celery powder, beet and spinach, can be converted into Nitrites through a fermentation process, specially activated for the production and preservation of processed meats.
A CLOSER LOOK AT NITRITES
However Synthetic Nitrites, if ingested continuously over time and in large quantities, can become potentially dangerous. For that reason, the World Health Organization (W.H.O.) recommends limiting the intake of Nitrites (see more) and USDA regulations establish maximum levels for the use of Nitrites in meat products (see 9 CFR 424.21).
